Ingredients
– 1 cup mixed dried fruits
– 1 cup raisins
– 1/2 cup brewed coffee, cooled
– 1/2 cup Baileys Irish Cream
– 1 cup unsalted butter, softened
– 1 cup brown sugar
– 3 large eggs
– 2 cups all-purpose flour
– 1 tsp baking powder
– 1/2 tsp baking soda
– 1 tsp ground cinnamon
– 1/4 tsp salt
– 1/2 cup chopped nuts (optional)
Instructions
prepare the fruit mixture:
1. Combine the dried fruit and raisins in a bowl. Pour over the cooled coffee and Baileys, allowing the fruit to soak for at least 1 hour, or even overnight for added richness.
make the cake batter:
1. Preheat oven to 325°F (160°C) and grease a bundt or tube pan.
2. In a large bowl, cream the butter and brown sugar until light and fluffy.
3. Add eggs one at a time, mixing well after each addition.
4. In another bowl, mix together flour, baking powder, baking soda, cinnamon, and salt.
5. Gradually fold the dry ingredients into the butter mixture, alternating with the soaked fruit, and mix until just blended.
6. Gently fold in the chopped nuts if using.
bake the cake:
1. Pour the batter into the prepared pan and smooth the surface.
2. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
3. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack to cool fully.
